Jacques Pépin Built a Lifetime of Teaching Around Technique

Chef Jacques Pépin argues that cooking is best taught through techniques that work across recipes and cuisines, not by asking cooks to memorize instructions. In an interview with Tim Ferriss, he traces that approach to his French training, his work in professional kitchens and his later demonstrations, where audiences responded to basic tasks such as peeling a carrot. Pépin says recipes offer a useful starting point, but cooks learn to make a dish their own by following the method first, then tasting, judging and adjusting.
